The Demolition
Our landlord was gracious enough to offer to pay for the demolition of existing structures that would not be capable of being used in the restaurant design. The critical aspect of the demolition was to complete enough of the kitchen and front end design to identify what structures can be used as part of the new design and which must be removed. Weeks into the design process and after the demolition, due to some unforeseen problems, we were required to change our front end design including the bar. This meant that existing structures originally deemed to fit into new design had to be removed.

  Demolition of existing structures  
This section of wall was originally intended to house our centerpiece work of art (a Peter Lik photograph which is 8’ high framed). A required redesign of the front end and bar areas required the removal of the structure.

Passion’s own “Sandbox”
               
   
Pete Sessa from WNIS 790 AM “House Talk” was brought with his Infrared Camera to assist us in trying to locate the waste drain piping, which runs under the concrete. We poured large volumes of boiling water into the drains to raise the heat signature of the pipe. Although we were unable to find the drain line that ran to the street, we did identify a second drain line tied into the adjacent space and not the main line in our unit. It was well worth the time and effort. As Pete often says on his show, disproving a belief can be just as important and useful as proving a belief.
