The Design
The next step in the birth of a restaurant is design. It was necessary
to design both the kitchen and the front of the house. We contracted
CREST Food Service for the kitchen design and LaMahn Interiors for
the front of the house. An iterative process, it took us several
weeks to identify a concept for the front. For the kitchen the approach
was different. The challenge was coming up with a design that was
capable of fitting all required equipment and also be functional.
To help reduce construction costs, we tried to reutilize as much
of unit 4’s 16 foot high walls as possible which established
the boundary for the outer wall of the kitchen. We also did not
want the design to relocate or modify the existing bathrooms on
the unit 4 side. The design process took several weeks, many times
requiring us to rethink a particular approach or aspect because
of some problem. In parallel with the building design, we had to
come up with a name and logo for the restaurant. We decided on the name Passion because of the Passion we exhibited
for this venture. We hired a professional designer to build
our logo and after thirty or so tries, we finally decided on our
choice.
